Hidden Valley® Country French Salad
You’ll need:3/4 cup Hidden Valley® Farmhouse Originals
Roasted Onion Parmesan
2 teaspoons very dry sherry
1/4 teaspoon coarse grind black pepper
2 sweet potatoes, peeled and cut into cubes
1 red bell pepper, seeded and cut into cubes
1 head iceberg lettuce, cut into chunks
1 pount thick sliced roast beef, cut into cubes
1/2 cup pecan halves, toasted
4 slices thick cut, peppered bacon, cooked crisp and chopped
Instructions:
- Stir together dressing, sherry and black pepper; set aside.
- Place sweet potato and bell pepper chunks in mixing bowl; stir in 1/4 cup dressing mixture to coat pieces evenly.
- Place on baking sheet in a single layer & roast at 450ºF for about 15 minutes, or until soft and browned on edges.
- Remove from oven and let cool.
- In large salad bowl toss lettuce, roast beef, sweet potatoes, bell peppers, pecans and bacon.
- Pour on remaining dressing mixture and garnish with shaved Parmesan cheese, if desired.
